  • Ready to start the WSET course with my new business cards.

  • Tasting, my nemesis. At least it was all explained clearly so I knew what to aim for.

  • Judging colour: colourless, lemon-green or lemon?

  • The bottles from the first round of tasting. Needless to say, the spittoons were getting lots of use or you would be paralytic by lunchtime.

  • Another round of tasting.

  • I had a lot of trouble seeing the haze in a sake that had not been charcoal fined (muroka) - the gentleman sitting next to me taught me the trick of holding it up in front of print to see the blur it produced.

  • More bottles from tasting!

  • I particularly liked the clear bottle in the middle here - made entirely from rice seeded with the koji fungus and very sweet.

  • The final tally of the first day.

  • Crossing London Bridge at the end of an intensive day.
