A Nagoya-based company is pursuing a very simple pairing concept by opening a tamago-kake gohan (rice topped with an egg) restaurant with menus selected by a sake expert, alongside a sake shop specialising in junmai nama.
The minimalist menu at Shisei (written in old katakana) consists of free-range eggs from a selected farm on top of Ai Hitotsubu rice, accompanied by miso soup, a simmered dish and pickles, and Aichi Prefecture’s traditional white soy sauce. Diners can also order takana (a type of mustard green), Korean spicy miso sauce, chirimen sansho (dried baby sardines with sansho pepper), umeboshi, shio-konbu and mentaiko as rice toppings.
The special niku-jaga (simmered meat and potatoes) is made with junmai sake instead of cooking sake, and the junmai used changes daily. Everything is served on Kutani ware, which is also available to buy in the restaurant.
Junmai sake shop YATA has been around since 2012 as a casual tachi-nomi (standing bar) but will now have a shop in the same building offering non-traditional styles such as nama-juku (aged unpasteurised sake). Drinkers at YATA can also order tamago-kake gohan or miso soup and experiment with pairing them with junmai sake alongside a range of 10 specially selected types of soy sauce, or try adding atsu-kan to niku-jaga.
Shisei and YATA are in B1F of the Dai Nagoya Building, just across the road from the Sakura-dori exit of JR Nagoya Station.
