Taste Translation: Annual Japan Sake Awards 2024

Released at the beginning of July 2024, Suigei’s new label Sou Light (蒼 Light) is the first release in their new TOSAGURA Craft series.

The brewery reports that they managed to keep alcohol down to 14% while preserving the clean acidity they’re known for plus a light body, and hope it will appeal to people who don’t drink sake regularly.

Made from 100% Yamada Nishiki and a blend of two Kochi yeast strains, the sake is also brewed with more than the usual ratio of brewing water which results in ginjo-ka aromas of strawberry and melon. A 720 ml bottle retails for JPY 1760 (including tax).

The sake is made at Suigei’s Tosagura, built in 2018, and the new series focuses on leveraging traditional techniques and staying true to Suigei’s character while aiming to create new flavours and releasing small-quantity experimental batches to market. They plan to release two more products in the autumn.
