Akita Prefecture has a new rice variety – Saki Hokore. [Romanisation mine.] Sake made from this new rice, also called Saki Hokore, was produced by three breweries: Suzuki Shuzōten (Hideyoshi) and Dewatsuru Shuzō (Dewatsuru), both in Daisen, and Dainagawa (Dainagawa, Tenka) in Yokote.
The brewing laboratory at the Akita Prefecture Food Research Centre found a brewing method that put the umami of the rice front and centre, and the three breweries used the centre’s experimental data to produce the new sake. Each one will have a recommended retail price of JPY 1,800 for a 720 ml bottle, and they will be on sale at Akita Station, Akita Airport and the “Akita Bisaikan” antenna shop in Tokyo’s Minato ward.
The new rice variety has actually been around since 2014 under the development name “Aki-kei 821” (秋系821).
