Nara brewery Yuchō Shuzō, makers of Kaze no Mori, have been collaborating with chef Tatsuya Kobayashi since 2022 on the standing counter restaurant A+ (à plus, French for “see you later”) where their sake is paired with modern French-style dishes.
The restaurant is housed in a renovated warehouse belonging to Aburanaga Shuzō, a short walk from the Kintetsu station in Gose where the valley that makes up the centre of Nara Prefecture starts to narrow into mountains in the south. It’s open Tue–Fri for lunch and dinner, and at the weekend for dinner only.
Kobayashi enjoys coming up with pairings for Kaze no Mori’s distinctive fruitiness and acidity, and uses a range of local products such as vegetables and soy sauce, adding miso to olive tapenade and wasabi to cream cheese. Some of his pairings include sparkling sake with French-inspired dishes such as duck pâté de campagne or galettes filled with smoked salmon.
