Old Vintage (Japanese name 株式会社匠創生, Takumi Sōsei), founded in May 2017 by Akihiko Yasumura and based in Awaji, Hyogo Prefecture, Japan, is offering a blend-your-own service for aged sake. The company seems to be part of the larger Pasona Group.
The company has a dining-bar near the main address plus a Tokyo office, distribution centre in Hyogo Prefecture and storage facilities in Tochigi Prefecture. Its Tokyo showroom is called POPPING STAND, and the dining bar on Awajima Island is called Seikaiha Koshu no Ya. Their online shop has a wide range of 180 ml bottle sets dating as far back as 1983, and currently lists aged imo shōchū and umeshu as well as sake.
The blend-your-own service is called Inishie no Bishu Self-Blend, and has been offered at the Awaji dining-bar since 16 September 2022. The company only stocks sake, shōchū , awamori and umeshu aged for 10 years or more, You can select 3-5 sake from among 30 brands to create your own original vintage sake, and select one of two miniature bottles and one of three decorative boxes to personalise your blend even further. After selecting your combination of koshu, a sommelier will guide you through how much of each sake to use based on their sweetness/dryness and your own preferences.
